History

The Department of Food and Nutrition Education was established in August 2020 under the then Faculty of Home Economics Education. The Bachelor of Science (Food and Nutrition Education) and the Master of Philosophy (Food and Nutrition Education) programmes were introduced to help absorb applicants seeking admission into various programmes in tertiary institutions. The focus of the programmes is to produce professional teachers in Food and Nutrition through teaching, research, and community outreach. Again, because there are nutritional problems in Ghana, there is a need to offer specialized training in the area of Food and Nutrition in order to provide appropriate advice and services.

The programmes seek to contribute to national development by training students to take up leadership roles in community nutrition extension and outreach programmes. Graduates of this programme are expected not only to be job seekers but also job creators to reduce unemployment in the country.  The interest of students in Food and Nutrition continues to grow. Entrepreneurship and Mini Businesses is one of the key courses offered in the Department that prepares students effectively to be self-employed by setting up and managing their own small businesses. As part of the course, students develop Business Plans for their businesses, which they run alongside their studies.

Our curriculum gives students a solid foundation for further studies (Master's and doctorate) in Food and Nutrition.

Mission

The Department shall produce Graduates with academic and professional competencies in Food and Nutrition Education. It shall also conduct research and influence policy on Food and Nutrition Education in Ghana.

To be a global leader in Food and Nutrition Education, research, and information dissemination.

Goals of our programmes

The programmes aim to train high-calibre Food and Nutrition teachers to provide quality Food and Nutrition Education in Ghanaian educational institutions and work in other sectors of employment. The programmes are designed to equip students with knowledge and skills that would enable them to effectively teach Home Economics subjects such as Catering and Foods and Nutrition, and function credibly in other areas of employment.
